Nick Nairn – Nairns Cook School
Chef and restaurateur Nick Nairn and chef John Webber founded Nairns
Cook School with the aim of 'taking the stress and mystery out of
cooking'. It is located in a stunning lakeside position and has
been purpose built within a huge outbuilding on the Lochend Estate,
Stirling, Scotland.
Nick Nairn is Scotland's own celebrity chef and a great champion
of Scottish food and produce. He is self-taught, has created two
successful restaurants and, in 1990, became the youngest chef to
win a Michelin star in Scotland. His celebrity status started with
an appearance on Masterchef and since then he has gone on to work
on several TV series and to produce numerous cookbooks.
Your tutor on the courses will be John Webber, a very experienced
chef who has trained under Anton Mossiman and who has two Michelin
awards to his credit. John Webber and Nick Nairn worked together
at several large events and they decided to team up and start Nairns
Cook School when they realised that they shared ideas about fresh,
quality produce and cooking.
The kitchens are state of the art and have facilities for up to
ten people to cook, although class sizes are limited to eight. Fresh
herbs are supplied by the school's own herb garden and the Nairns
Cook School website includes a useful page about growing your own
herbs.
Five day courses are arranged at three levels: introductory, intermediate
and advanced, and they cover the complete range from soups to puddings.
Special one-day courses with titles like 'Asian Fusion Cooking',
'Nicks Top 100 Salmon Dishes' and 'Modern Scottish Cooking', are
also on offer.
As well as local bed and breakfasts, luxury chalet accommodation
is available on the estate and can be rented independently. The
chalets also make a great base for walking, mountain biking, watersports,
tennis and fishing and so are ideal for a family or group where
only some of the members are interested in the cookery courses.
